However, maintaining quality doesn’t stop at harvesting. Once stored, potatoes naturally experience an increase in sugar content over time, which can affect the flavor, texture, and color of the final flakes. This is where experience and infrastructure make all the difference. Grover Food exemplifies this approach through its fully integrated model, combining decades of farming expertise with advanced in-house cold storage to maintain superior potato flakes quality year-round.
Grover Food began as a small-scale farming and cold storage business in 1996 with a capacity of 5,000 metric tons of potatoes. Over the years, the company has expanded significantly, now operating 1,000 acres of its own farmland and managing 25,000 metric tons of own cold storage capacity.
In 2025, Grover Food took a major leap forward by launching its potato flakes manufacturing unit with advanced machinery imported from the Netherlands, boasting a production capacity of 25 metric tons per day. This strategic expansion has made it India’s only fully integrated ‘farm-to-flake’ manufacturer, handling every stage in-house, from cultivation and storage to processing. This vertical integration allows the company to ensure complete traceability, offering international clients full transparency regarding farming practices and pesticide usage.
Grover Food produces a wide range of potato flakes, from 200-bulk density for traditional Indian snacks like bhujiya to 700-bulk density and specialized low-leach flakes. The company is proudly accredited with the BRCGS certification, one of the most respected global benchmarks for food safety. What truly sets the company apart is its deeply integrated and resilient supply chain model.
“We effectively minimize risks associated with seasonal fluctuations and market volatility by combining our own large-scale farming operations with long-term
partnerships with local farmers. Our 25,000 metric ton cold storage capacity plays a vital role in maintaining a steady supply of high-quality potatoes throughout the year”, shares Eshan Grover, Managing Director, Grover Food.
This allows it to plan raw material utilization strategically, ensuring consistent production and uniform product standards regardless of external conditions. Through this seamless integration of farming, storage, and processing, the company not only stabilizes costs but also guarantees superior quality and reliability for its customers across both domestic and international markets.
Harnessing Advanced European Technology
Grover Food integrates cutting-edge European technology with its traditional farming expertise to deliver premium quality potato flakes. The company’s production line is equipped with a fully automated, European-grade machinery designed to minimize human intervention and maximize consistency. “From the intake of freshly harvested potatoes to the final packaging of flakes, the entire process operates seamlessly with only two to three manual touchpoints. Potatoes are gently peeled and steam cooked under precisely controlled pressure, preserving their natural flavor, color, and nutrients”, informs Eshan.
At the heart of the process lies the drum dryer from Tummers (Netherlands), which ensures uniform drying by carefully evaporating the water content, which is roughly 80 percent of a potato, leaving behind pure, high-quality potato flakes. This advanced automation not only enhances hygiene and efficiency but also ensures every batch meets global standards for quality and safety.
Innovation Driving Customer Success
A remarkable success story for the company is one where it collaborated with one of India’s leading snack manufacturers, who faced challenges with high oil consumption in their Aloo Bhujia production due to conventional potato flakes. Understanding the client’s concern, the company initiated a focused research and development (R&D) project to formulate low oil absorption potato flakes.
Through continuous trials and process optimization, the team successfully developed a specialized recipe that reduced oil usage by nearly 15–20 percent, leading to significant cost savings and improved product quality for the client. This achievement not only strengthened the customer’s trust but also positioned Grover Food as a technology-driven and solution-oriented partner in the potato processing industry.
Powering the Future Sustainably
Grover Food is charting an ambitious path toward sustainability and innovation. The company is in the process of becoming 100 percent solar-powered, aiming to meet all its energy requirements through renewable sources. Along with this green initiative, it is expanding into potato starch production, a new venture set to begin by the end of the year.
This diversification will strengthen its product range and create new opportunities in the global market, where the company already works with several leading international brands. “We have also invested heavily in a state-of-the-art water effluent treatment plant to keep our operations fully compliant with National Green Tribunal norms. We want to build a strong foundation for sustainable growth and leadership in India’s potato processing industry”, concludes Eshan.
