For the Love of Food
Aaugritaa's story is also the story of chef Shiv and his love for food. More than a decade strong experience in the food industry across the US & India and various global cuisines such as Continental, Mexican, Chinese & Indian paved his way to making a mark. It's not only that he marked his signature through Aaugritaa, but he was also instrumental in setting up a lot of kitchens across Delhi such as `Hao Shi Nian Nian' in Gurgaon (along with Chef Mike).
Having commenced Aaugritaa's operations in 2011 from a small office in South Delhi in association with a bunch of experienced old school caterers, Shiv slowly came over the startup challenges and looked forward to steadying the ship. Within the next couple of years, he started building the organization of his dreams, block by block, by slowly purchasing the high-end equipment and utensils. He eventually found a place to build a state-of-the-art kitchen, and ever since then Aaugritaa has been on a fast-growth mode. A significant amount of credit goes to the marketing endeavors by Shiv's younger brother Shashi Shankar Ghosh, who is a marketing professional with international
exposure, across multiple social media platforms.
"Currently we have three kitchens spread across South Delhi, and capabilities to undertake end-to-end catering services of any scale across South Delhi, Noida and Gurgaon. Our clients range from small organizations to corporate giants like Sony India, Samsung, Deloitte, KPMG, Dainik Jagran newspaper, and many more," asserts Shiv.
Although Shiv has handpicked and built a team of 10 chefs, he never hesitates to avail the service of specialist chefs, and thus easily scales up according to the requirements of the clients. For instance, for a recent event in Indira Gandhi Stadium, New Delhi, wherein Aaugritaa catered for 6,000 people, the company hired a team of eight special chefs and a number of people to assist them. Furthermore, be it 600 or 6,000 people, from sourcing to plating & presentation, Shiv oversees the entire process himself, and thus the uncompromised quality in offering. The word however spreads quickly when all the 6,000 people indulge in a standardized, quality culinary treat, isn't it? No wonder Aaugritaa gets the majority of its clients through referrals.
The Food Institute for Future
Aaugritaa also runs an institute in South Delhi, wherein the company offers everything from cooking classes to budding home cooks to internationally valid one-year diploma course for aspirant professional chefs. Till date, more than 230 students have graduated from the institute, which engages a one-on-one personal coaching model. "With a dedicated kitchen, we teach anything from chopping vegetables to cooking and from Plating & Presentation to Kitchen Planning and Inventory & Vendor management. The cuisines include Indian, Continental, Mexican & Chinese," adjoins Shiv, who plans to add one more kitchen to the institute within the next couple of years. In addition, he also plans to launch a takeaway/delivery kitchen in tie-up with Swiggy and Zomato by the end of this year.
